Homaro Cantu Provides Recipe with Canola Oil
Homaro Cantu, executive chef at the innovative Chicago restaurant Moto, shared a recipe for crispy sushi hand rolls with canola mayonnaise and fried in canola oil in an interview with Reuters. Famous for his scientific take on cooking, which has produced such dishes as the edible menus in his restaurant, Cantu recently showed off his creative techniques as a guest and presenter at the Canola Council of Canada’s annual meeting.

Viterra to Acquire Canola Crushing Plant
Viterra is set to buy an Associated Proteins LP canola crushing plant, which can crush 1,000 metric tons of canola per day, for $64 million. Karl Gerrand, senior vice president of food processing for Viterra, said the acquisition will help the company meet a growing demand for healthy oil. Pending approval, the deal will close June 25.

Australian KFC Restaurants Give Palm Oil the Boot
Yum! Restaurants, creators of KFC, will switch from palm oil to a healthier blend of canola and sunflower oils in their Australian restaurants among initiatives to phase out trans fat and reduce saturated fat in fast foods. Following a directive from Australia's then-assistant health minister to convert to a healthier oil, the company had delayed the change to ensure that the supply of the oil was adequate and that the taste of its products would be unaffected.

Canola Oil Featured at World Congress on Oils and Fats
The World Congress on Oils and Fats will be September 27-30 in Sydney, Australia. Programming will include many health and nutrition topics, such as obesity, diabetes and cardiovascular disease, as well as a session on the health benefits of canola oil. Robert Hunter, vice president of communications for the Canola Council of Canada, will present.

The North American Precis Syndicate (NAPS) awarded CanolaInfo a certificate of excellence for its "Go for the Gold" news story with heart-smart tips and a recipe by Olympian Janet Evans.
